Colorado State University has collaborated with the Colorado Department of Agriculture to create two to three graduate student fellowships providing interdisciplinary training and mentorship in the area of produce safety (see CSU Produce Safety Fellowship announcement, 2018-2019).

Carolina Mariano Ferraz is currently a second year Master’s student in Public Health with a concentration in Nutrition/Dietetics. She has being involved with food systems working as a Market Manager for Colorado Fresh Markets in the Denver area. Currently, she is developing her practicum project on creative ways to use a food assistance program. Over the summer, Carolina completed a short internship with Boulder Valley School District, where she learned more about their Farm to School initiative and the National School Lunch Program.
Carolina is from Brazil, where she completed her Bachelor’s degree in Nutrition/Dietetics at the University of Sao Paulo. During her undergraduate degree, she got involved with nutrition education in low-income communities, as well as in food production/management and health care facilities. For the past 3 years she worked as a dietitian at a public cancer hospital. She worked with inpatient and outpatient clients, and supported the hospital’s food service department in food safety.
Her interests include food security and accessibility, food policies, environmental health, food systems and health education. Carolina desires to combine her skills learned during her MPH degree and through the fellowship to improve food system and health among the general population.
Brian Mitchell is a first-year PhD student of horticulture at Colorado State University. He recently completed his Master of Science degree at CSU where he studied organic and sustainable agriculture, focusing on techniques to improve the yield and quality of tomatoes in organic high tunnel systems. His next research project will look at cover crops in organic vegetable systems, where he hopes to inform the cover cropping practices of Colorado farmers as they work to suppress weeds, feed the soil, prevent erosion, and manage their agroecosystems. His interests include organic and sustainable agricultural systems, vegetable production, local food systems, food security, and, of course, produce safety.
In addition to his exciting work as a Produce Safety Fellow this year, Brian is a 2018-19 Vice President of Research Fellow, the Graduate Student Council representative for the Department of Horticulture & Landscape Architecture, the graduate student member of the Committee on Teaching & Learning, and he works as a teaching and research assistant in his department. He has been fortunate to work with eleven horticulture classes (and counting) as a lab instructor and TA and is passionate about education, plants, and good food! Brian has a BA in Pan-African Studies and Psychology from Kent State University, an AAS in Horticultural Science from Johnson County Community College, and has over a decade of experience in the landscape and nursery industry, plant propagation, and nursery production & management.
